Physiology
Elderberries consist of natural substances called flavonoids, such as quercetin and anthocyanins. These increase cytokine production and have antioxidant properties known to reduce free radicals within the cells, preventing cellular damage and promoting beneficial anti-cancer and anti-aging processes. Cytokines are small protein released by the cells. These “messenger proteins” support the interaction between individual cells and play an integral role in preventing viruses from crossing the cell membrane. Elderberries also contain a substance called antivirin, which further inhibits the replication of viruses. Elderberries have been clinically proven to be effective on over 10 flu strains, including swine and avian flu. Packed to the brim beneficial flavonoids, elderberries hold rank as one of the highest food source antioxidants available. According to the USDA database elderberries exceed blueberries in ORAC (Oxygen Radical Absorbance Capacity) values by 315%! These tiny berries offer profound effects on the immune system and body, as a whole.
